Growler Policy:
In order to make growler filling an efficient experience please adhere to these guidelines:
· All growlers that you bring in must be clean prior to filling.
· We will fill 12oz, 500ml, 750ml, OEC Growlers, 32oz, 1L, 64oz & 2L growlers. This does include growlers from other breweries, store & bars.
· We will only fill screw-top growlers if you provide a clean sealable screw-top. We will not have these caps available at the brewery.
· We will not fill plastic, clear, metal or large wide mouth German style growlers with handles (They unfortunately do not fit in our growler fillers). Sorry for any inconvenience.

We will be releasing the brand new Zymatore J.W. Lees Harvest Ale aged for 1 year in PX Sherry & Tequila barrels on our house grown Chambourcin wine grapes. Only 800 liters produced. ~14% abv. Draft and bottles. 500ml/$16. Limit 4 per person.
Oh, one Zymatore release is not enough for you?? No problem, Zymatore Super Baladin aged in Zinfandel and Tequila barrles for 29 months coming at ya!!! Only 600 liters produced.~10% abv. Draft and bottles. 750ml/$18. Limit 4 per person.
We will also be releasing a limited amount of vintage Grandis (Blend #1) bottles. We will offer Grandis by the pour in the tasting room and it is also available for take home. As if that wasn’t enough we will also have a very limited amount of Grandis (Blend #1) “eisbocked” right in the tasting room for small pours only. Check it out. It’ll be nuts. Bottles to go: 750ml/$18. Limit 2 per person.
For the final time of the year we will also bring back a classic… John Courage Imperial Russian Stout, vintage 1993. Here is your opportunity to try a 23 year old stout, and you need to try it. Available for on-site consumption only! $15 a bottle, no limit.

Affinage is a French word that comes from the French verb Affiner, which comes from the Latin “ad finis”, meaning “towards the limit”. The Affineur is the person who ages cheeses.
In cheese terms, affinage describes the ageing and maturing of cheese. It is during this period of time that flavor and texture development take place. Each cheese has a set of unique requirements for temperature, humidity, and treatments (such as washing, brushing, or turning) that, combined, will ensure its proper development. Aging and maturing is not a precise science: the animal, the flora, the quality of the milk, the terroir, the season have an influence on the cheeses; the skill of the affineur is to be able to adapt his techniques and methods to the cheeses.
