The Vindemia project encompasses ales brewed with wine grapes grown on our own property. We are currently cultivating the following varieties: Chambourcin, Catawba, Cayuga, Marechal Foch, Traminete & Vidal Blanc. It takes a vine 3 years to mature to a point where it is ready to bear quality fruit. Every year we remove a majority of the buds to ensure that the vines put as much energy as possible into making very concentrated grapes.
Limited Edition: Vindemia Nouveau
7.2% abv – Blend of three different ales matured in a Matthiasson Vineyards Syrah (Napa, CA) barrels for 8 months with our 2017 Chambourcin grapes. Blend date was 4/27/2018.
Limited Edition: Vindemia Blanc
7.2% abv – Blend of one year old ales matured in oak barrels on Vidal Blanc grapes & champagne currants.
Blend #1 is a blend of three different ales matured in Red Hen Merlot (Napa, CA) & Mathiasson Vineyards Syrah (Napa, CA) barrels for at least 1 year & matured on our Vidal Blanc grapes & Champagne Currants. This version was blended on 11/15/2016.
Blend #2 – is a blend of several different ales matured in Red Hen Merlot (Napa, CA) & Gondola Vineyards Cabernet Sauvignon (St. Helens, CA) barrels for at least 1 year and matured on our own Vidal Blanc & Cayuga grapes. This version was blended on 9/5/2017.
Limited Edition: Vindemia Brut
6.5% abv – Vindemia Brut is one year old ale matured in oak barrels with Chambourcin Grapes.
Blend #1 – This was aged 1 year in a single Gandona Vineyards (Napa, CA) Cabernet Sauvignon barrel with a special grape addition from our vineyard using a technique called carbonic maceration. 50lbs of Chambourcin grapes are fermented whole in a contained environment with CO2 prior to being added to the barrel yielding an intense Champagne like character. This version was blended on 5/18/2017.
Limited Edition: Vindemia Noir
8.4% abv – Blend #1 – This is a blend of 3 different ales matured (between 1 & 3 years) on our Chambourcin and Cayuga grapes in Gandona Vineyards Cabernet Sauvignon and Matthiason Vineyards Merlot barrels. This version was blended on 3/29/2017.
Limited Edition: Vindemia Rogue
8.5% abv – Blend #1 – This is a blend of different ales matured in Matiasson Vineyard Red Hen Merlot (Napa, CA) barrels with our own 2017 Marechal Foch & Chambourcin grapes. This version was blended on 4/29/2018.
Limited Edition: Vindemia Rosa
5.3% abv – Blend #1 – This is a blend of three different ales matured in old wine barrels for at least 1 year from Napa, CA & matured on red & white grapes: Spontalis matured in a Syrah barrel with Marechal Foch grapes, Exilis matured in a Merlot barrel with Chambourcin grapes and Salsus matured in a Chardonnay barrel with Traminete grapes. This version was blended on 4/24/2016.
Limited Edition: Vindemia Ouzo
9%abv – Vindemia Ouzo is an unique Vindemia that uses a batch of Italian Malbo Gentile red wine grapes sourced near Birrificio del Ducto. This blend of sour ales was matured for an additional 6 months in absinthe barrels from Letherbee Distillers (Chicago,IL). Deep pinkish in color and extremely aromatic, Vindemia Ouzo makes for an incredibly unique and refreshing rose style beer. This version was blended on 4/12/2021.
