Our bakery will be open from 9am until sellout, featuring breads, cheese, charcuterie, coffee and more. Experimentalis With Limes & Raspberries – 750ml – Limit 3 per person – 360 bottles – $22
EXPERIMENTALIS is our barrel aging project using fruits that are grown in our Horticultural Area. Each release is unique and no two releases will taste the same.
This version of Experimentalis with Limes & Raspberries is a blend of 1 and 2 year old ales matured in Matthiasson Vineyards Chardonnay barrels (Napa, CA) on our greenhouse limes and raspberries.
Spontalis Classic – 750ml – Limit 4 per person – 420 bottles – $17
Shocking as it may seem but we love traditional lambic ales from Belgium. Spontalis is our homage to these spontaneously fermented beers. Spontalis is 100% spontaneously fermented (no cultured yeast or bacteria is added, whatsoever) by sitting in our coolship for 16 hours and then undergoing fermentation in oak barrels.
Spontalis Classic is our interpretation of a traditional Belgian Gueuze produced by blending young and old spontaneously fermented ales.
Vindemia Nouveau – 500ml – Limit 3 per person – 240 bottles – $16
The Vindemia project emcopasses ales brewed with wine grapes grown on our own property. We are currently cultivating the following varieties: Chambourcin, Catawba, Cayuga, Marechal Foch, Traminete, Vidal Blanc.
Vindemia Nouveau #1 is a blend of three different ales matured in a Matthiasson Vineyards Syrah (Napa, CA) barrels for 8 months with our 2017 Chambourcin grapes.
