Baudelot Blanche is our take on a 1900’s Belgian Witbier (“White Ale”) spiced with bitter orange peel and coriander. After World War I, witbier brewers adopted a more modern approach using steel vessel and a two stage cooling process going from the coolship to the baudelot chiller prior to the fermentation tank.
Back then witbier was still produced using complicated & arcane mash procedures (ours takes 21 steps prior to cooling). The use of plenty of unmalted wheat & oats led to a velvety character and pillowy white head.
