Hitachino Nest Weizen with Ubriaco del Piave
The good little owl can make a delicious hefeweizen too! Lovely banana and clove notes dominate the aroma while the flavor offers a touch of citrusy sweetness. The Ubriaco adds some tanginess to the pairing and creates a juicy pineapple burst!
BFM Spike & Jêromé’s Barley Ryne with Stilton
Spike & Jêromé is a rye barley wine style ale partially aged in rhum barrels, that I suggest letting warm to nearly room temperature. The rye comes through with a slight hop bite but then settles into a pleasant sweet and sour ale. Stilton is a very pungent blue cheese that cuts through the bite and brings its own funk to create a harmonious flavor that just tickles the taste buds. This pairing is the epitome of sophistication.
Alvinne Morpheus Wild Undressed with Cocoa Cadonna
Morpheus Wild certainly lives up to its name, the smooth vinegar taste and subtle carbonation bite really makes it an interesting treat. The Cocoa Cadonna embraces the vinegar like qualities to bring out a more pronounced tanginess in itself. The hint of cocoa sweetens up the beer to the flavors of muscadine in the summertime.
Uerige Doppelsticke with Cashews (nuts)
While not a cheese pairing, it is a must-try beer and food pairing! The Doppelsticke is a beer brewed for the brewery’s special visitors and for export to the US market. It has rich complex flavors it’s earthy, hoppy, nutty and sweet with hints of cedar. The cashews, with their rich flavors and sweetness blend excellently with this beer. No need to even salt the cashews… Just put a little Doppelsticke on ’em!
