Come celebrate 1 year of wild & sour beer!
We will be featuring 15 draft lines of madness, several bottle releases and general good times. 7 draft lines inside and 8 outside. There will also be a separate line for ALL bottle sales and special pre-filled growlers. Please be sure to bring cash, as our Square credit card system might decline your card after several transactions. Please reserve using your card for purchasing bottles or larger transactions, thank you for understanding.
The draft list:
- Exilis – Our Berliner Style Weisse is brewed using a traditional 3 part decoction using the thin part of the mash in each decoction. The hops are added and boiled during the decoction process. Unboiled, the beer then sits in the coolship overnight. The next day it is transferred to the tank and pitched with some house yeast making this a semi spontaneously fermented ale.
- Tempus (Blend #4) – Blend #4 is a blend of 50% young Tempus lagered for at least 3 months in wine barrels blended with 25% 1 year old lambic style ale & 25% 1 year old barrel aged saison.
- Phantasma Sour (Blend #2) – Phantasma “Sour” Blend #2 was aged in a variety of barrels ranging from Zinfandel (Napa, CA), Pinot Noir/Whiskey (Portland, OR) & Pedro Ximenez Sherry (Spain) barrels for 1 year. It pours a viscous jet black in color and has notes reminiscent of red wines, dark fruits & hints of dark chocolate. It finishes dry with notes of oak & tannins.
- Nepenthes Hydromelita (Blend #1) – Rye saison with sage and lavender fresh from our horticultural area added to the coolship and then again dry-herbed with more fresh sage and lavender blended with South African Sweet Mead matured in wine barrels.
- Brunneis (Blend #1) – Brunneis is our blended Oud Bruin. Blend #1 was matured in 5 different barrels that used to hold whiskies as well as zinfandel & fortified wines. It is deep brown in color with a touch of carbonation. Reminiscent of dark fruits & raisins it has a balance between acidity & maltiness that are enhanced by a slight smokiness on the nose.
- Novo (Blend #1) – A blended dry-hopped saison. 30% oak aged ale, 70% young ale. Dry-hopped with Perle and Ella hops.
- Malefactus (Wine Barrel Aged #1) – Malefactus is our Imperial Wheat Stout with brettanomyces. It is brewed to 12% ABV using abbey, debittered roasted chocolate wheat malts. The aroma is lightened by the use of coriander.This special edition is aged 6 months in freshly racked Dashe Cellars Syrah barrels from Napa California. The barrel aging brings a soft acidity & fruitiness that still leaves a soft roastiness with notes of dark chocolate in the finish.
- Malefactus: Citrus Edition – This special edition is aged 6 months in oak barrels on different citrus fruits from our greenhouse including Buoquet de Fleur oranges & kumquats. The flavor & aroma totally belie the pitch black color of the beer. Citrusy, sour & remarkably drinkable for 12% abv.
- Artista Zynergia: Solaris – A blend of an OEC “semi-spontaneously” fermented ale with Spanish Sagardoa from Sarasola. Together they combine to create a unique combination between tart apple cider and the lime and lemony acidity of the ale.
- Artista Zynergia: Gosatequin – A blended new age Gose style ale produced in cooperation with Gosebrauerei Bayerischer Bahnhof (Leipzig, Germany). It is spiced with coriander, pink peppercorns and a touch of salt. It is a blend of 40% 1 year old oak aged ale in Pinot Noir/Gin barrels, Tequila barrels and 60% young sour ale lagered in oak barrels.
- Experimentalis With Peaches (Dashe Cellars Late Harvest Zinfandel Barrel) – This version of Experimentalis With Peaches was aged on our garden peaches for 12 months in a Dashe Cellars Late Harvest Zinfandel barrel from Napa, CA.
- Experimentalis With Bouquet de Fleurs (Petite Verdot Barrel) – This version of Experimentalis With Bouquet de Fleur (Sour Oranges) was aged on our greenhouse sour oranges for 12 months in a Thelema Mountain Vineyards Petit Verdot barrel.
- Spontalis Novus – Spontaneously fermented & aged 1 year in an oak barrel, unblended lambic style ale.
- Zymatore Verdi (Thelema Moutain Grenache Barrel) – Del Ducato’s imperial stout Verdi, brewed with chili peppers aged 26 months in Thelema Mountain Grenache barrels that also held Makana iQhilika Birdseye Chili mead.
- Zymatore 1809 (Pinot Noir/Whiskey Barrels) – Professor Fritz Briem’s 1809 Berliner Weisse aged 2 years in Ransom Spirits Pinot Noir/Whiskey barrels.
