The Zymatore Project is a collaborative project between B. United International & it’s word class producers and OEC. For the Zymatore collection, we do not make the beer we only do the barrel aging and blending. The base beer is from one of our imported producers. We take that beer and then barrel age it here at B. United International & OEC Brewing and then potentially blend different barrels to create a finish product. And as the Zymatore project evolves, we have now also added fruits and herbs from our own orchard/greenhouse/vineyard to the barrels to allow for more complexity and flavors. All this is done with the original producers consent. No two Zymatore will ever taste the same and we do not intend for Zymatore to taste like their base product!

Zymatore 1809
1809 is a Berliner Weisse produced by Professor Fritz Briem, Germany. We then take the beer and aged it for 2 years in Ransom Spirits Pinot Noir/Whiskey barrels.
Zymatore Abbaye de Saint Bon-Chien
Abbaye de Saint Bon Chien is a BARREL AGED abbey style beer produced by BFM, Switzerland. The base beer boldly treads the boundaries between port, wine, and beer.
Blend #1 – We take that beer and then barrel aged it AGAIN in PX Sherry Barrels from Spain for 6 more months! This is a beer that has been “double” barrel aged and has been barrel aged for close to 4 years in total. The result is a double aged beer.
Blend #2 – We take that beer and then barrel aged it AGAIN for 12 months in Matthiasson Vineyards Chardonnay barrels from Napa, California. The result is a double aged beer.
Zymatore Al-iksir
Al-iksir is a demi-sec produced by Birra del Borgo, Italy. We take the base beer and aged it for 2 years in Christian Drouin Pommeau barrels!
Zymatore Baciami Lipsia
The base beer is Baciami Lipsia (Kiss My Lips) is a sour gose style ale from Del Ducato, Italy. The base beer is a sour ale that is a blended of several barrels that are 9 months old (these barrels were inoculated with lactobacillus) with a new beer that is brewed with Himalaya pink salt. This is a very special version as we then aged the beer in OEC’s NEWEST fermentation vessel – Bavarian Blue Grey Granite (located in our new fermentation room) for 5 months.
Zymatore Bitter & Twisted
Bitter & Twisted is an English Bitter from Harviestoun Brewery, UK. No two blends will be the same! Zymatore willl not taste like the base product! We then take the beer and aged it in Ransom Spirits Gin/Pinor Noir barrels for 8 months.
Zymatore Canaster
Canister is a Scotch Ale produced by Glazen Toren, Belgium.
Blend #1 – We then take the beer and aged it in different barrels and then blend from 4 barrels – 2 California Zinfandel, 1 Belgian Owl Whiskey, and 1 Italian Grappa.
Blend #2 – We then take the beer and aged in Mathiassen Chardonnay barrels.
Zymatore Caos
Caos is an Italian speciality brew from Birra del Borgo, Italy that is inspired by the Champagne world where “wine meets beer” and the addition of Malvasia white wine grapes. We then aged the beer in French Pinor Blanc Barrels for 13 months.
Zymatore Castagnale
Castagnale is an Italian Chestnut Ale made with locally grown and dried chestnut produced by Del Borgo, Italy. We then take the beer and aged it in Thelema Mountain Petit Verdot & Grenache Red Wine barrels.
Zymatore Cuvee 7eme
La Cuvee 7eme is BFM’s 7th anniversary brew – a biere de garde. We then take the beer and aged it in Ransom Spirits Gin/Pinor Noir Barrels (1 aging of gin & 3 agings of pinor noir) for 19 months.
Zymatore Cuvee Angelique
Cuvee Angelique is a Belgian Strong Ale produced by Glazen Toren, Belgium. We then take the beer and aged it for 2.5 years in Channing Daughters Ramato & Ransom Spirits Whiskey/ Pinor Noir barrels.
Zymatore Cuvee Freddy
Cuvee Freddy is a sour dark barrel aged beer from Alvinne, Belgium. We then take the beer and aged it in three different barrels (Marsala, Whiskey and Merlot and then blended it.
Zymatore Isaac
Isaac is a Belgium Wit produced by Birrificio Baladin, Italy. No two blends will be the same! Zymatore willl not taste like the base product!
Blend #1 – We then take the beer and aged it for 30 months in Leonhardt Vineyards Zinfandel Barrels from Calfornia for 30 months (2.5 years).
Blend #2 – We then take the beer and aged it for 13 months in Ransom Spirit Gin/Pinor Noir Barrels.
Zymatore J.W. Lees
J.W. Lees Harvest Ale is a English Barleywine produced by JW Lees, UK.
Blend #1 – We then take the beer and aged it on Chambourcin Red Wine Grapes from OUR OEC vineyard for one year in a Spanish Moscatel barrel.
Blend #2 – The beer was matured for 1 year in PX Sherry & Tequila barrels and aged on Chambourcin red wine grapes. Only 800 liters were produced of this batch.
Zymatore Maledetta
Maledetta IPA is an Italian IPA/Saison produced by Del Borgo, Italy. We then take the beer and aged it in Thelema Mountain Petit Verdot barels for 33 months (almost 3 years).
Zymatore Nipponia Pilsner
Hitachino Nipponia is a Japanese beer brewed using a forgotten strain of Japanese barley along with the historic Sorachi Ace hops produced by Hitachino, Japan. We then take the beer and aged it for 24 months in Ransom Spirits Gin/Pinor Noir Barrels (1 aging of gin & 3 agings of pinot noir) for 24 months.
Zymatore Saison d’ Erpe Mere
Saison d’ Erpe Mere is a traditional saison produced by Glazen Toren, Belgium. We then take the beer and aged it for 2 years in Ransom Spirits Whisky / Pinot Noir barrels.
Zymatore Saison di Pipaix
Saison di Pipaix is a saison with licorce, orange and mint produced by Brasserie Vapeur, Belgium. We then take the beer and aged it in Christian Drouin Calvados from France.
Zymatore Super
Super is an Abbey style beer from Birra del Baladin of Italy. We then take the beer and aged it for 29 months in a blend of three barrels (two California Zinfandel & one Tequila barrel).
Zymatore Uerige Doppelsticke
Doppelsticke is an Alt beer produced by Uerige, Germany. We then take the beer and aged it in HillRock Whiskey barrels.
Zymatore Verdi Imperial Stout
Verdi Imperial Stout is an Italian Imperial Stout made with chili peppers from Del Ducato, Italy. We then take the beer and aged it for 18 months in Thelema Mountain Grenache/ Iqhilika Chili Mead barrels from South Africa.
