9.5% abv – Phantasma is our interpretation of an old style German Porter (a style that went extinct long ago), brewed with wheat, oats, molasses and licorice root. No two blends will taste the same! It pours a viscous jet black in color and has notes reminiscent of red wines, dark fruits & hints of dark chocolate. It finishes dry with notes of oak & tannins.
Blend #1 (blended 4/22/2014) – Aged in a number of barrels ranging from Zinfandel (Napa, CA), Whiskey/Pinot Noir (Portland, OR) & Belgian Owl Whiskey (Belgium).
Blend #2 (blended 4/14/2015) – Aged in a variety of barrels ranging from Zinfandel (Napa, CA), Whiskey/Pinot Noir (Portland, OR) & Pedro Ximenez Sherry (Spain) barrels for 1 year.
Blend #3 (blended 7/21/2016) – Aged in a variety of barrels ranging from Zinfandel (Napa, CA), South African Red Wine & Belgian Owl Whiskey barrels for 1 year.
Blend #4 (blended 5/27/2017) – This version was aged in varieties of barrels ranging from Syrah (Napa, CA), Cabernet Sauvignon (Napa, CA) & Marsala (Sicily) barrels between 1 & 3 years.
Blend #5 (blended 1/16/2018) – This version was aged in a variety of barrels ranging from Syrah (Napa, CA), Cabernet Sauvignon (Napa, CA) & Merlot (South Africa) barrels between 6 months and 2 years.
Blend #6 (blended 12/31/2018) – This version was aged in a variety of barrels ranging from fresh Hungarian Oak (Hungary), Cabernet Sauvignon (Napa, CA) & Marsala (Sicily) barrels between 6 months and 2 years.

Limited Edition: Figtasma
Figtasma Blend #1 – This special edition is a double barrel aged Phantasma with the addition of figs from our own orchard. It was blended from Zinfandel (Napa, CA), Whiskey/Pinot Noir (Portland, OR) & Pedro Ximenez Sherry (Spain) barrels for 1 year and then double matured in a former Burgundy barrel from Dashe Cellars in Sonoma, CA with fresh figs from our own orchard added. This version was packaged on 10/23/2015.
Figtasma Blend #2 – This version was blended from a variety of barrels including Zinfandel (Napa, CA), South African red wine & Belgian Owl whiskey barrels. It was then double matured for an additional 12 months in a Merlot barrel from Red Hen Vineyards (Napa, CA) with fresh figs from our greenhouse. This version was packaged on 8/2/17.

XXX Double Barrel Aged Singularis #2 – This special edition was aged and blended from a variety of barrels, including Zinfandel (Napa CA), South African Red Wine & Belgian Owl Whiskey barrels. It was then double matured for 9 additional months in a Merlot barrel from Red Hen Vineyards Napa CA. This version was blended on 4/18/17.
XXX Double Barrel Aged Singularis #3 – This special edition was blended, 60% oak aged ale, 40% young ale. This special edition was aged & blended from a variety of barrels, including Syrah (Napa, CA), Cabernet Sauvignon (Napa, CA) & Merlot (South Africa). It was then double matured for 7 months in a Tokaji white wine barrel from the Royal Tokaj Winery (Hungary). Blend date was 8/2/2018.
XXX Double Barrel Aged Singularis #4 – This special edition was aged & blended from a variety of barrels including Syrah (Napa, CA), Cabernet Sauvignon (Napa, CA) & Merlot (South Africa) barrels. It was then double matuered for 7 months in a Tokaji white wine barrel from the Royal Tokaj Winery (Hungary). This version was blended on 3/27/2019.
Baby Phantasma
6% abv – Baby Phantasma lives up to its name as a smaller version of it’s bigger brother. It is open fermented & brewed using a mix of lightand roasted malts along with wheat and oats. We blend the young beer with a healthy portion of wine barrel aged sour beer giving its signature vinous character.
