The Oryza project is our attempt to marry the unique fermentation processes of sake & sour ale production. By blending two separate processes after fermentation we hope to achieve a unique flavor & aroma combination that could not be created in a single fermentation.
Limited Edition: Albus Oryza
10.5% abv – Albus Oryza is a blend of our white ale (brewed using a chamomile, ginger & lemon balm) matured for 12 months in a Matthiasson Vineyards Chardonnay barrels and an unpasteurzied Namasake from Kikusakari Sake (”Kiuchi Brewery”) in Japan. This version was blended on 11/15/2016.
Limited Edition: Salsus Oryza
10.5% abv – Salsus Oryza is a blend of our rustic gose (brewed using a touch of French Grey Sea Salt & spice it with coriander & pink peppercorns) matured for 9 months in a Matthiasson Vineyards Syrah barrel and an unpasteurzied Namasake from Kikusakari Sake (”Kiuchi Brewery”) in Japan. This version was blended on 11/18/2016.
Limited Edition: Double Secret Probation Oryza
10.5% abv – This is a blend of sour ales matured in oak barrels and then double matured for an additional 9 months in our pink granite fermenter. It is then blended with unfiltered sake from Kikusakari Sake (Kiuchi Brewery) in Japan. This version was blended on 11/16/2017.
Limited Edition: Ouzo Oryza
11% abv – A special collaboration between OEC and Kiuchi, Japan. Blend of sour ale matured in absinthe barrels with meyer lemons and unfiltered sparkling sake. Blend #1 was 12/4/2018. Blend #2 was 2021.
Limited Edition: Amphora Oryza
12 % abv – Amphora Oryza is a blend of ales matured for 9 months in our amphoras on our white & red grapes and an unfiltered sake from Kikusakari Sake (Kiuchi Brewery) in Japan.
Limited Edition: Ume Oryza
11% abv – A special collaboration between OEC and Kiuchi, Japan. Blend of sour ale matured in oak barrels with Japanese plums and unfiltered sparkling sake.
Limited Edition: Oudilis Cassis Oryza
10% abv – Oudilis Cassis Oryza is a special 3 way blend using 2 year old Hanssen’s Cassis with currants, Kiuchi sake and an OEC sour ale with freshly picked currants from our orchard matured in oak barrels for 9 months. This was packaged 1/8/2018.
Limited Edition: Oudilis Cerasus Oryza
8.8% abv Special 3 way blend using 3 year old Hanssens Kriek with Schaarbeekse cherries, Kiuchi Yamahi (Old World Sake) and a sour saison that was matured on our sour cherries from our orchard for 8 months. This version was packaged 1/8/2018.
