11% abv – Malefactus is our Imperial Wheat Stout with brettanomyces. It is brewed to 11% abv using abbey, debittered roasted & chocolate wheat malts. Stylistically it is a hybrid between a strong stout, Belgian quad & a dark wheat beer. The aroma is lightened by the use of coriander & black pepper. Primary fermentation takes 4 weeks.
Limited Edition: Citrus
Citrus Edition – This special version was aged 6 months in oak barrels on different citrus fruits from our greenhouse including Bouquet de Fleur oranges & kumquats. The flavor & aroma totally belie the pitch black color of the beer. Citrusy, sour & remarkably drinkable for 12% abv. This version was packaged on 4/26/2015.
Limited Edition: Whiskey
Whiskey Edition – This is special version was matured for an additional 1 year in Hillock Estate Whiskey barrels (Ancram, NY). It is jet black, velocity, very low in carbonation. The influence from the whiskey barrels is balanced out by a touch of acidity, a soft roasting, notes of black pepper & dark chocolate. This version was packaged on 11/2/2015.
Limited Edition: Amphore
Amphore – “Domitare” Stille Edition – This special edition was then matured for an additional 9 months in our Amporae (large terra-cotta pots) from Italy & blended with 1 year old Malefactus aged in Matthiasson Vineyards Syrah Barrels. It is jet black, velvety & very low in carbonation. The amphorae brings in a touch of minerality & acidity while the barrel aged portion adds fruitiness.This version was aged on 8/12/2016.

Malefactus Wine Barrel Aged Blend #1 (4/17/15) – This special edition was aged for 6 months in freshly racked Dashe Cellars Syrah barrels from Napa California. The barrel aging brings a soft acidity & fruitiness that still leaves a soft roasting with notes of dark chocolate in the finish.
